Tomato Balsamic Basil Chicken


Here is a healthy chicken recipe that even fits into my bikini prep diet.


1 pound thinly sliced boneless, skinless chicken breasts

Pam olive oil spray

1 shallot, minced

1 clove garlic, minced

1 cup cherry tomatoes, halved

4 tablespoons balsamic vinegar

1/2 cup fresh basil leaves


1. Heat Pam olive oil spray in pan, add chicken seasoned with salt and pepper.

2. Cook chicken, turning once, until cooked through and no longer pink

3. Remove chicken, wrap in foil to keep warm

4. Add minced shallot and garlic to pan, cook until softened

5. Add tomato halves and balsamic vinegar, cook until tomatoes soft, then add torn basil

6. Serve tomato, vinegar mixture over chicken with a side of broccoli.

Beginning your fitness journey


To get started on your fitness journey, start with exercises you think you will enjoy.  Nothing sounds worse to me than going to the gym and running/walking on a treadmill for 30 minutes, way too boring! It’s important to find something you like to do. For me this was taking up running.  I have NEVER been a strong runner.  When I first started, I couldn’t run for longer than 2 minutes without stopping to walk but, I was motivated to one day be a strong runner so I kept at it, running for longer and longer periods of time. To date, my longest run has been 10 miles. After, I started running, I realized how much I liked being active and I started doing yoga.  I liked yoga but, it wasn’t something I stuck to once I discovered kickboxing.  I started kickboxing and I loved it and you can burn up to 1000 calories per class!  That beats the 200 calories you’ll burn on a boring treadmill.  I stuck with kickboxing and eventually began Brazilian Jiu Jitsu (BJJ) which I love.  So I found what I like to do and it works for me, I currently rotate kickboxing, BJJ, and running for cardio and get a cardio workout in at least 5 days a week… And guess what? I don’t dread a single second of it.

Get Motivated! Dress the part

Look good, feel good!

Get motivated to get out there and be active by buying new flattering workout clothes.  Instead of wearing sweatpants and a baggy t-shirt find a bright tank top and some cute pants. I’ve noticed the price of workout clothes skyrocket in the last couple years and I refuse to spend $90 on workout pants.  I find workout clothes at Nordstrom Rack, Ross, Marshall’s, Forever 21, Nike Outlet, and my favorite, the Target clearance rack.  I find that I am much more motivated to workout when I have cute workout clothes.

Tank Tops!!!

I love finding inexpensive tank tops! I have tons of them to workout in. I just raided Forever21 clearance over the weekend and found tanks for as little as $3


Workout shoes is where I will splurge, you only need one good pair.  I still try to find a good deal and will usually look at the Nike Outlet.  My favorite training shoes are Nike Free TR fit 3. I have three pairs of them, they are so light weight and breatheable and come in so many bright colors.
